All depends on your topology really, if you're talking multiple VLANS spanning multiple sites and 's of users then I would recommend server DHCP as this would cause unnecessary overhead on your routers and if the router ever goes down then clients will not be able to be assigned IP addresses locally.

One half was distributed by the server, the other half by the router. Originally it was all done by the server, but one day I came into the office and for whatever reason the DHCP service had stopped and I couldn't restart it without a reboot. This wasn't feasible so I quickly set up a lease on the router which got everyone back up and running with vaild IP addresses. I then rebooted the server at a suitable time. Just make sure the lease is split in half and there are no overlaps otherwise you'll get IP conflicts with both DHCP's giving out the same addresses.

I'd be interested if anyone had any thoughts around this set up as I never really designed this in, it just fixed the issue I had at the time and I thought it would be useful to leave it this way in case something similar happened in the future.

Server DHCP is flexible, complex but robust enough to do almost anything you want to when it comes to hosts IP configuration management which I think router isn't capable of performing.

Having a router to do the dhcp job in an environment with hundreds or thousands of users would most likely result in users experiencing delay in packet delivery and communication with other networks.
