What is hominy soup
I got the recipe from my Mexican friends. However, this version is sooo easy and much more flavorful than my version. My husband and I loved it! I made this soup for a quick dinner on January 1. I never follow soup recipes to the "T" in any case and did not here either.
I used more jalapeno and onion than called for and sauteed those. I cut two large boneless chicken breasts into chunks and cooked them first with the jalapeno, onion and garlic and then let them cook more slowly in the stock. I also used some salt, fresh ground pepper, Monterey chicken seasoning, cilantro, and cumin and let all of that simmer with the other ingredients for minutes before I put the hominy and also some parsley in and then let it simmer some more.
It was absolutely delicious and deliciously aromatic. The kids loved it and so did I! This is a great, FAST recipe. It's quite filling and the flavors go well together. The only changes we made were to add some cumin and some lime juice to it we didn't make the chips with it. A perfect weeknight meal for those chilly evenings. I thought this soup was simple to make and delicious in flavor! I can see how some people may want more seasoning - esp.
I added some crumbled tortilla chips in mine instead of making the tortilla chips noted in the recipe - made it even simpler to make in a short period of time without taking away the crunchy texture to the dish. Loved this soup! So easy and good. I made it gluten free by boiling chicken tender and shredding.
Loved the chips too. Might have been bland, as one rater noted, but I can never leave a soup recipe alone, so I added a bunch of spices can't cook without cayenne for one , fresh veggies and canned tomatoes with jalapenos drained. I baked chicken breasts that were seasoned with garlic salt and pepper and used that in my soup instead of the store-bought chicken. It added the right taste to it. It's another rainy and cold day so we're having it again tonite! Very, very bland. We love all the ingredients in general, but this was a flop for us. It needs something more. We even squeezed lime into it, but it couldn't save the soup.
I made the Cumin-Lime Tortilla Chips too and they went so well together. It is very quick and easy - even the chips. I'm only giving this a three star because with the spices stated it is pretty bland. I triple the spices add quite a bit of hot sauce and this soup is spot on.

If you like it hot this is for you. Warren Hice. I made this for the first time last night. It was delicious. The only changes that I would possibly make are to double up on the solids. Another idea is to maybe substitute shrimp for the chicken adding more cumin and perhaps some cayenne pepper.
